Vicky Sue Parsons, 70, passed away on August 16, 2026, after a short and courageous battle with cancer. Born on November 7, 1955, in Liberty, Missouri, to Art and Shirley Pollard, Vicky lived a life defined by strength, love, creativity, and an unwavering acceptance of others.
Vicky was one of the strongest people you could ever know. More than 20 years ago, she faced and survived breast cancer, and when cancer entered her life again, she met it with that same strength. She was loving and fair, and she had a way of accepting people exactly as they were. Her family and friends knew there was always room for them in her life and at her table.
And if you were at Vicky's table, you were going to be well fed.
Vicky was a fantastic cook and was known throughout her family for the meals she made with love. Her red velvet cake, in particular, was a family favorite that will undoubtedly be talked about—and missed—for years to come.
Her creativity extended far beyond the kitchen. Vicky loved live music, art, enjoyed making jewelry and creating beautiful stained glass pieces. She found joy in making things with her hands and sharing that creativity with the people around her.
Vicky retired from the Ford Claycomo Assembly Plant after more than 30 years of dedicated service. It was also through work that she met the love of her life, Homer James "Jim" Parsons III. Vicky and Jim shared more than 30 years of marriage, building a life together filled with family, love, and travels to many wonderful places.
Vicky is survived by her husband, Jim; her children, Myra Bruce and husband Andrew, Kelly Parsons, and Christopher Parsons and wife Britney; her grandchildren, Zachary, Levi, Caleb, Caitlin, Cierrah, Chelsie and her husband Austin, Aubree, Brody and Samantha, Bentley, Marley, and Sadie; her beloved niece and nephew, Nicole and Trent Pollard; several beloved great-grandchildren; and many extended family members and friends whose lives were made better simply by knowing her.
She was preceded in death by her parents, Art and Shirley Pollard; her brother, Brad Pollard; her sister, Cheryl Ann Pollard; and her grandson, Carter Thurman.
Vicky leaves behind a lifetime of memories, pieces of her creativity, recipes that will continue to be shared, and a family that will carry her love and strength forward. Most of all, she leaves behind the example of a life lived with an open heart—a life that always had room for one more person at the table.
A Celebration of Life will be held at a later date, with details to be announced.
